Broccoli Slaw

Portion Size: 1/2 cup

4 slices turkey bacon(optional)
2 12-ounce package Broccoli SlawWashed
1/2 cup low-fat or nonfat plain yogurt
1/2 cup light mayonnaise
1/4 cup cider vinegar
2 teaspoons sugar
1/2 teaspoon salt, or to taste
Freshly ground pepper to taste
1 8-ounce can sliced water chestnutsRinsed and coarsely chopped
1/2 cup finely diced red onionWashed, peeled and minced

1Cook bacon in a large skillet over medium heat, turning frequently, until crisp, 5 to 8 minutes.(Alternatively, microwave on High for 2 1/2 to 3 minutes.)
2Drain bacon on paper towels. Chop coarsely.
3Whisk yogurt, mayonnaise, vinegar, sugar, salt and pepper in a large bowl.
4Add water chestnuts, onion, bacon and Broccoli Slaw; toss to coat. Chill until serving time.
