Cabbage Salad with Dijon Mustard Dressing

6 cups white or green cabbageWash and cut cabbage into thin shreds.
2 cups piece red cabbageWash and cut cabbage into thin shreds.
2 tablespoons parsley flakes
2 teaspoons Dijon mustard
¼ cup red-wine vinegar
1 teaspoon salt
2 tablespoons extra-virgin olive oil

1Cut cabbage into thin shreds and add parsley.
2In a small bowl whisk together mustard, vinegar, and salt until combined.
3Whisk in oil in a slow stream, whisking until combined.
4In a large bowl toss together cabbage, parsley, vinaigrette, and salt and pepper to taste until combined.
5Chill salad, covered.
