Candied Sweet Potatoes

Portion Size: ½ cup

Ingredients Notes: 
8 medium sweet potatoesWashed 
¼ cup margarine Melted 
½ cup miniature marshmallows 
¼ cup brown sugar
¼ teaspoon nutmeg
Salt to taste

1Wash and scrub potatoes. 
2Cut a small piece off one end of each potato. 
3Preheat oven to 400 degrees. 
4Bake 40 to 60 minutes depending on the size until tender. 
5Peel potatoes.
6Spray baking dish with a nonstick vegetable spray. 
7Cut potatoes into sections. 
8Put potatoes into baking dish and top with margarine, nutmeg, marshmallows, brown sugar and salt. 
9Bake for 15 minutes more and serve. Cook until internal temperature reaches 135°F.
