Carrot Salad with Cilantro

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 cups medium carrotsWashed, peeled and finely shred carrots
1 Tablespoon fresh lime juice
1/8 teaspoon finely grated fresh lime zestWash lime 
2 Tablespoons  fresh cilantro leaves  or driedWashed, trimmed and finely chop
1 teaspoon vegetable oil

1Finely shred carrots and in a bowl toss together with remaining ingredients and salt and pepper to taste.
2Serve salad garnished with cilantro.
