Cauliflower and Apple Salad

Portion Size: 1/2 cup

½ cup  reduced-fat mayonnaise
2 tablespoons cider vinegar
1 small red onionPeeled, washed, and finely chopped
½ teaspoon salt
1/4 teaspoon freshly ground pepper
3 cups chopped cauliflower floretsWashed, trimmed and chopped 
2 cups Romaine lettuceWashed, trimmed and finely sliced. Remove tough stems or membranes.
2 tart-sweet red appleWashed, trimmed and chopped

1Whisk mayonnaise, vinegar, onion, salt and pepper in a large bowl until smooth.
2Add cauliflower, romaine and apple; toss to coat. Chill until ready to serve.
