Celery and Pear Salad
Portion Size: 1/2 cup

| 2 cups celery | Washed, trimmed, and cut in half crosswise |
| 2 tablespoons cider vinegar | |
| ¼ cup light mayonnaise | |
| 2 tablespoons honey | |
| 1/4 teaspoon salt | |
| 4 ripe pears | Washed, cored and diced (leave the peel on) |
| 1 cup shredded low fat Cheddar cheese | |
| 1/2 cup chopped pecans | Toasted |
| ¼ teaspoon ground pepper | |
| 8 large leaves lettuce | Wash (garnish) optional |

| 1 | Whisk vinegar, honey and salt in a large bowl until blended. | |
| 2 | Add pears; gently stir to coat. | |
| 3 | Add the celery, mayonnaise, cheese and pecans; stir to combine. Season with pepper. Chill until ready to serve. | |
| 4 | Divide the lettuce leaves among 8 plates and top with a portion of salad. Serve chilled. |
