Cheesy Ham and Red Potato Bake

Portion Size:  1 cup

2 lbs. cooked ham, diced
4 cups red potatoes, dicedWash and trim. May leave on peel. 
2 tablespoons margarine or butter
2 tablespoons all-purpose flour
1 cup nonfat milk
½ cup chopped green onion
1 cup light sour cream
½ cup bread crumbs
1 cup lowfat cheddar cheese, shredded
For gluten free (GF): Use GF all-purpose flour and GF bread crumbs.  Always check each ingredient to be sure it is gluten free.

1Pre heat oven to 350 degrees
2Place potatoes in a large pot of water and bring to boil.  Boil until slightly tender about 12 minutes. Drain and transfer to a large bowl.
3In a large saucepan, melt margarine or butter and add flour. Cook 1 minute.
4Stir in milk. Bring to boil and reduce heat to low. Stirring constantly.
5Add cheese and stir. Cook 1 minute.
6Add cheese sauce to potatoes. Add sour cream and onions. Stir.
7Arrange ham slices on bottom of baking dish.  Top with bread crumbs. 
8Bake for 40 minutes or until internal temperature reaches 160°F. Let stand for about 10 minutes.
