Cheesy Ham and Red Potato Bake

| 2 lbs. cooked ham, diced | |
| 4 cups red potatoes, diced | Wash and trim. May leave on peel. |
| 2 tablespoons margarine or butter | |
| 2 tablespoons all-purpose flour | |
| 1 cup nonfat milk | |
| ½ cup chopped green onion | |
| 1 cup light sour cream | |
| ½ cup bread crumbs | |
| 1 cup lowfat cheddar cheese, shredded |

| 1 | Pre heat oven to 350 degrees | |
| 2 | Place potatoes in a large pot of water and bring to boil. Boil until slightly tender about 12 minutes. Drain and transfer to a large bowl. | |
| 3 | In a large saucepan, melt margarine or butter and add flour. Cook 1 minute. | |
| 4 | Stir in milk. Bring to boil and reduce heat to low. Stirring constantly. | |
| 5 | Add cheese and stir. Cook 1 minute. | |
| 6 | Add cheese sauce to potatoes. Add sour cream and onions. Stir. | |
| 7 | Arrange ham slices on bottom of baking dish. Top with bread crumbs. | |
| 8 | Bake for 40 minutes or until internal temperature reaches 160°F. Let stand for about 10 minutes. |
