Cheesy Ham and Broccoli Bake

Portion Size:  1 cup 

Ingredients: Yields: 8 servings

2 lbs. cooked ham, sliced 
1 (10 oz.) package chopped broccoli, thawed
2 tablespoons margarine or butter
2 tablespoons all-purpose flour
1 cup nonfat milk
4 cups cooked riceUse brown or white rice
1 cup light sour cream
½ cup bread crumbs
1 cup lowfat cheddar cheese, shredded
For gluten free (GF): Use GF all-purpose flour and GF bread crumbs.  Always check each ingredient to be sure it is gluten free.

1Pre heat oven to 350°F.
2In a large saucepan, melt margarine or butter and add flour. Cook 1 minute.
3Stir in milk. Bring to boil and reduce heat to low. Stirring constantly.
4Add cheese and stir. Cook 1 minute.
5Remove from heat and stir in sour cream and broccoli
6.Arrange ham slices on bottom of baking dish.  Top with broccoli mixture and then bread crumbs. 
7.Bake for 40 minutes or until internal temperature reaches 160 °F. Let stand for about 10 minutes.
