Florentine Ham Casserole

Portion Size:  1 cup total 

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 lbs. cooked ham, slices
2 (10 oz.) package chopped spinach, thawedMay substitute fresh spinach for frozen, Washed trimmed and chopped. 
12 oz. package  mushroomsWash and slice
½ cup onion, choppedWash, peel and slice
1 teaspoon garlic powderOr substitute 2 cloves minced
½ cup butter or margarine
¼ cup all-purpose flour
2 cups Nonfat milk
4 eggs beaten
½ teaspoon ground oregano
1 teaspoon basil
¼ teaspoon black pepper
1 cup lowfat mozzarella cheese, shredded
For gluten free (GF): Use GF all-purpose flour.  Always check each ingredient to be sure it is gluten free.

1Pre heat oven to 350°F.
2In a large saucepan cook mushroom, onion and garlic in margarine or butter, cook until tender but not brown.
3Stir in flour and milk. 
4Cook and stir over medium low heat 4-5 minutes or until thickened and bubbly.
5Remove from heat and stir in oregano, pepper, basil, spinach and eggs. 
6Arrange ham slices on bottom of baking dish.  Top with spinach mixture and then cheese. 
7Bake for 40 minutes or until internal temperature reaches 160°F. Let stand for about 10 minutes.
