Chicken Apple Stuffed Pita
Portion Size: 3 oz. (½ c.) chicken apple mixture, ½ pita pocket bread

2 tablespoons light mayonnaise | |
1 tablespoon honey | |
1 teaspoon mustard | |
2 cups red apples, chopped | Wash, trim, and chop (may leave on peeling) |
1 tablespoon lemon juice | |
1-pound cooked, boneless, skinless chicken breasts | Trim all visible fat |
½ cup celery, diced | Wash, trim and chop |
½ cup peanuts, chopped | Unsalted |
8 lettuce leaves | Wash and trim |
4 large pita pocket breads, halved | Optional: whole grain pita pockets |

1 | Combine yogurt, mayonnaise, mustard and honey in small bowl; set aside. | |
2 | Mix apples with lemon juice in large bowl. | |
3 | Add chicken, celery, and peanuts. | |
4 | Fold yogurt mixture into apple mixture. | |
5 | To serve, place 1 lettuce leaf in each pita half; fill with chicken mixture and serve. |
