Chicken Apple Stuffed Pita

Portion Size: 3 oz. (½ c.) chicken apple mixture, ½ pita pocket bread

Ingredients: Yields: 8 servings

Ingredients Notes: 
½ cup plain, low fat yogurt
2 tablespoons light mayonnaise
1 tablespoon honey
1 teaspoon mustard  
2 cups red apples, choppedWash, trim, and chop (may leave on peeling)
1 tablespoon lemon juice
1-pound cooked, boneless, skinless chicken breasts Trim all visible fat
½ cup celery, dicedWash, trim and chop
½ cup peanuts, choppedUnsalted 
8 lettuce leavesWash and trim
4 large pita pocket breads, halvedOptional: whole grain pita pockets
For gluten free (GF): Use GF pita pocket or sub. GF bread. Always check each ingredient to be sure it is gluten free

1Combine yogurt, mayonnaise, mustard and honey in small bowl; set aside.
2Mix apples with lemon juice in large bowl.
3Add chicken, celery, and peanuts.  
4Fold yogurt mixture into apple mixture.
5To serve, place 1 lettuce leaf in each pita half; fill with chicken mixture and serve.
