Chicken Pesto Sandwiches

8 slices tomato | Washed, trimmed and sliced |
¼ cup red onion | Washed, trimmed and thinly sliced |
8 slices Provolone cheese | |
¼ cup margarine | |
Pesto Sauce: | |
1/2 cup Fresh Basil Or 2 cups Fresh Spinach and 2 cups Fresh Basil | Washed and trimmed |
¼ cup Parmesan cheese | |
2 tablespoons olive oil | |
2 tablespoons pine nuts | |
½ teaspoon cloves garlic | Washed, peeled and minced |
1/4 teaspoon salt | |
½ teaspoon black pepper |

1 | Prepare pesto sauce. Combine ingredients in a food processor. Refrigerate until ready to use. | |
2 | Spread 1 side of each outside slice of bread with margarine. Place margarine side down and top with chicken, provolone cheese, tomato, onion, and pesto sauce. Gently grill flipping once until both sides of the bread are golden. |
