Chicken Pesto Sandwiches

Portion Size: 1 Sandwich

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 lb. cooked  or grilled boneless skinless chicken breastsCut into strips
16 slices Italian Bread
8 slices tomatoWashed, trimmed and sliced
¼ cup red onionWashed, trimmed and thinly sliced
8 slices Provolone cheese
¼ cup margarine
Pesto Sauce: 
1/2 cup Fresh Basil Or 2 cups Fresh Spinach and 2 cups Fresh BasilWashed and trimmed
¼  cup Parmesan cheese
2 tablespoons olive oil
2 tablespoons  pine nuts
½ teaspoon  cloves garlicWashed, peeled and minced
1/4 teaspoon salt
½ teaspoon black pepper
For gluten free (GF): Use GF bread. Always check each ingredient to be sure it is gluten free

1Prepare pesto sauce. Combine ingredients in a food processor. Refrigerate until ready to use. 
2Spread 1 side of each outside slice of bread with margarine. Place margarine side down and top with chicken, provolone cheese, tomato, onion, and pesto sauce. Gently grill flipping once until both sides of the bread are golden.
