Chicken with Lime Sauce
Portion Size: 3 oz. chicken and 2 T. sauce

2 ½ lbs. boneless skinless chicken breast or thighs | |
2 tablespoons cooking oil | |
½ cup lime juice | Fresh lime juice works best. |
1 cup apple juice | |
1 tablespoon cornstarch | |
2 teaspoons low sodium chicken bouillon cubes or granules | |
1 lime | Washed and sliced (optional). |

1 | Spray a large skillet with nonstick spray. Heat oil in skillet. | |
2 | Add chicken and cook over medium heat for 2 to 3 minutes or until tender and no pink remains. Remove from skillet and keep warm. | Cook until internal temperature of chicken reaches 165 degrees F. |
3 | In mixing bowl combine lime juice, apple juice, cornstarch and bouillon. Add sauce to skillet and cook, stirring constantly. Cook until thick. | |
4 | Spoon sauce over chicken and serve. Garnish with lime slice if desired. |
