Chocolate Mousse

2 tablespoons cold water | |
¼ cup boiling water | |
1 cup sugar | |
½ cup cocoa | |
2 cups chilled whipping cream | |
2 teaspoons vanilla |

1 | In custard cup sprinkle gelatin over cold water; let stand 1 minute to soften. | |
2 | Add boiling water; stir until gelatin is completely dissolved and mixture is clear. | |
3 | Cool slightly. | |
4 | In small mixer bowl stir together sugar and cocoa; add whipping cream and vanilla. | |
5 | Beat at medium speed, scraping bottom of bowl occasionally, until stiff peaks forms; pour in gelatin mixture and beat until well blended. | |
6 | Spoon into serving dishes. | |
7 | Chill about ½ hour. | Chilled internal temperature maintained at 41°F. |
