Chocolate Mousse

| ¼ cup boiling water | |
| 1 cup sugar | |
| ½ cup cocoa | |
| 2 cups chilled whipping cream | |
| 2 teaspoons vanilla |

| 1 | In custard cup sprinkle gelatin over cold water; let stand 1 minute to soften. | |
| 2 | Add boiling water; stir until gelatin is completely dissolved and mixture is clear. | |
| 3 | Cool slightly. | |
| 4 | In small mixer bowl stir together sugar and cocoa; add whipping cream and vanilla. | |
| 5 | Beat at medium speed, scraping bottom of bowl occasionally, until stiff peaks forms; pour in gelatin mixture and beat until well blended. | |
| 6 | Spoon into serving dishes. | |
| 7 | Chill about ½ hour. | Chilled internal temperature maintained at 41°F. |
