Chocolate Mousse

Portion Size: 1/2 cup 

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 teaspoons unflavored gelatin
2 tablespoons cold water
¼ cup boiling water
1 cup sugar
½ cup cocoa
2 cups chilled whipping cream
2 teaspoons vanilla    


Steps:Directions: Critical Control Point /Quality Assurance
1In custard cup sprinkle gelatin over cold water; let stand 1 minute to soften.
2Add boiling water; stir until gelatin is completely dissolved and mixture is clear.
3Cool slightly.  
4In small mixer bowl stir together sugar and cocoa; add whipping cream and vanilla.
5Beat at medium speed, scraping bottom of bowl occasionally, until stiff peaks forms; pour in gelatin mixture and beat until well blended.
6Spoon into serving dishes.
7Chill about ½ hour.Chilled internal temperature maintained at 41°F.
