Cornmeal Dumplings

Portion Size: ½ cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 cup flour
½ cup cornmeal 
1 teaspoon double acting baking powder 
2 eggs
¼ cup non fat milk
¼ cup parsleyWashed and finely chopped. (Optional) 
1 tablespoon sugar 
1 teaspoon salt 
2 to 3 cups stock

1Beat eggs in medium bowl. 
2Add baking powder, milk, sugar, salt, cornmeal and flour. 
3Stir until moistened. 
4Bring stock to boil in medium saucepan. 
5Drop dumplings by tablespoons in boiling water. 
6Cook until dumplings rise to the top (about 10 minutes). 
7Remove dumplings with a slotted spoon. Serve hot.Internal temperature 165 F.
