Curried Beef

Portion Size: ½ cup curried beef and ½ cup rice

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 tablespoons cooking oil 
2 1/2 pounds beef round, cut in 1 inch cubesTrim all visible fat
2 medium onions, sliced Wash, peel and slice
1 clove garlicWash, peel and mince
1 tablespoon curry powder
1 tablespoon all purpose flour 
1 teaspoon salt
1 low sodium Beef bouillon cube, crumbled
1 1/2 cup water 
1/4 cup vinegar 
1/2 cup raisins
4 cups cooked rice
1/2 pint low fat plain yogurt 
For gluten free (GF): Use GF beef bouillon and GF flour. Always check each ingredient to be sure it is gluten free.

1In skillet brown meat in the cooking oil.
2Add onions and garlic and cook until slightly clear.
3Add curry powder.
4Stir and cook 2 to 3 minutes, being careful curry powder does not burn.
5Stir in flour and salt.
6Add bouillon cube, water, vinegar and raisins; stir.
7Cover and cook over low heat until meat is tender, 2 to 2 1/2 hours, stirring several times.Cook until internal temperature reaches 165 F degrees for 15 seconds 
8If mixture becomes too dry, an additional half cup of water may be added.
9Cook rice according to package directions.
10Serve with beef and top with yogurt.
