Curried Beef with Apple Couscous

Portion Size: 3 oz. meat over ½ c. couscous

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 1/2 pounds boneless beef top sirloin steak, cut into thin  slices across the grainTrim all visible fat
½ teaspoon salt 
½ teaspoon black pepper 
1 tablespoon oil
1 large red pepper seeded and cut into thin strips Wash, trim and cut
1 large green pepper, seeded and cut into thin strips Wash, trim and cut
1 cup water 
1 cup apple juice
2 teaspoons low sodium instant beef bouillon granules 
1 ½ cups couscous May use whole wheat
2 applesWash, core and coarsely chop
½ cup chopped unsalted peanuts 
For gluten free (GF): Use GF beef bouillon and substitute GF pasta or brown rice for couscous.
Always check each ingredient to be sure it is gluten free.

1Sprinkle steak with salt and pepper.
2Grill beef over medium coals or sauté in large skillet. Cook until internal temperature reaches 145 F degrees for 15 seconds 
3In a large skillet, heat oil over medium heat. 
4Add peppers and onions. Cook for 5 minutes.
5Add curry powder. Cook and stir for 1 minute.
6Add the water, apple juice, and  bouillon granules.
7Bring to boil. Stir in couscous and apple.
8Cover and let stand about 5 minutes or until liquid is absorbed.
9To serve, fluff couscous mixture with fork. Thinly slice steak across the grain.
10Serve steak slices over couscous mixture. Sprinkle with peanuts.
