Dumplings

Portion Size: ½ cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1 ½ cup flour
2 teaspoons double acting baking powder
2 eggs  
¼ cup nonfat milk
¼ cup parsley Washed and finely chopped. (Optional)
1 tablespoon salt 
2 to 3 cups low sodium stock or broth

1Beat eggs in medium bowl. 
2Add baking powder, milk, sugar, salt and flour.
3Stir until moistened. 
4Bring stock to boil in medium sauce pan. 
5Drop dumplings by tablespoons in boiling water. 
6Cook until dumplings rise to the top (about 10 minutes). 
7Remove dumplings with a slotted spoon. Serve hot.Internal temperature 165 F.
