Dumplings
Portion Size: ½ cup

| 1 ½ cup flour | |
| 2 teaspoons double acting baking powder | |
| 2 eggs | |
| ¼ cup nonfat milk | |
| ¼ cup parsley | Washed and finely chopped. (Optional) |
| 1 tablespoon salt | |
| 2 to 3 cups low sodium stock or broth |

| 1 | Beat eggs in medium bowl. | |
| 2 | Add baking powder, milk, sugar, salt and flour. | |
| 3 | Stir until moistened. | |
| 4 | Bring stock to boil in medium sauce pan. | |
| 5 | Drop dumplings by tablespoons in boiling water. | |
| 6 | Cook until dumplings rise to the top (about 10 minutes). | |
| 7 | Remove dumplings with a slotted spoon. Serve hot. | Internal temperature 165 F. |
