French Onion Soup

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 tablespoons oil
2 cups onionsWash, peel and slice
½ teaspoon dried thyme
8 cups reduced sodium beef broth
8 slices French bread
8 slices Provolone cheese
1 cup low fat Swiss CheeseShredded
¼ cup grated Parmesan cheese

1In a large stock pot heat oil to medium high heat
2Add onions. Cook until tender. 
3Add beef broth, thyme and bring to boil. Reduce heat. Simmer about 20 minutes. Heat the oven broiler
4Ladle soup into oven safe serving bowls and place one slice bread on top of each. Layer each bread slice with slice of provolone, ¼ cup Swiss cheese and Parmesan cheese. Place bowls on cookie sheet and broil in preheated oven until cheese bubbles and browns slightly
To make this recipe gluten free: Use GF broth and GF bread. Always check all ingredients to be sure they are gluten free.
