Ham and Bean Skillet

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 pounds ham, cut into ½ inch cubes
2 teaspoons vegetable oil
4 medium carrotsWashed, peeled and diced.
1 large onion, diced
2 (15 oz.) Great Northern beansMay use no added salt, rinsed and drained
1 cup reduced sodium chicken broth
2 teaspoon thyme, crushed
1 teaspoon dried oregano, crushed
2 tablespoons dried parsley

1In a large nonstick skillet over medium heat; sauté carrot and onion until onion is soft, about 5 minutes.
2Stir in ham, beans, broth, thyme, oregano and parsley.
3Bring to boil, cover and lower heat to a simmer; heat through about 10 minutes. Serve hot. Internal temperature should reach 160°F.
