Ham and Cheese Breakfast Tortillas

Portion Size: 1 Breakfast Tortilla 

(1/4 cup egg/ham, 1 oz. cheese, 1 tortilla, 2 tablespoons salsa)

Ingredients: Yields: 8 servings

Ingredients Notes: 
12 EggsCan use egg substitute
2/3 cup nonfat milk
½ pound cooked diced ham
4 green onions, Wash, trim and slice thin. (including tops)
8 ounces shredded low fat cheddar cheese
8 (10 inch) flour tortillasMay use whole wheat tortillas
salt and pepper to taste
½ cup salsa (optional)
For gluten free (GF): Use GF tortillas Check all ingredients to ensure they are gluten free.

1Beat together eggs and milk
2Heat a lightly oiled skillet over medium high heat
3Cook egg mixture stirring occasionally until firmCook until internal  end temperature is 165° degrees F.
4Stir in ham, green onion, salt  and pepper
5Spoon the egg mixture on top of each tortilla
6Sprinkle the eggs with cheese
7Fold and roll tortilla to make a roll
8Top with salsa if desired and serve immediately
