Ham and Corn Chowder

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 tablespoons oil
1/4 cup onionPeeled, washed, thinly sliced, and diced 
¼ cup diced celeryWashed, trimmed and diced
2 tablespoons flour
½ teaspoon paprika
½ cup frozen whole kernel corn
2 cups diced and peeled potatoesPeeled, washed, and diced
2 cups fat free milk or half and half
2 tablespoons dried parsley flakes
6 cups low sodium chicken broth
¼ teaspoon salt 
1/2 lb. lean ham, diced
Dash of pepper

1Heat oil to medium high heat in a large saucepan.
2Add onion. Cook until lightly brown.
3Sprinkle with flour. Add remaining ingredients.
4Heat mixture to boiling.  Reduce heat. Simmer 20 minutes.   Cook until internal temperature reaches 135°F.
