Ham Hocks and Beans
Portion Size: 1 cup (3 oz. meat, ½ cup beans)

| 2 pounds lean ham, diced | Trim all visible fat |
| 1 Ham hock bone | |
| 2 large cans no added salt pinto beans | Rinsed and drained |
| ½ cup onion | Washed, trimmed and chopped |
| 4 cups water | |
| 1 teaspoon pepper | |
| 3 bay leaves | |
| 1 teaspoon garlic powder | Or 2 cloves, minced |

| 1 | In a large stock pot add ham bone, bay leaves, beans, onion and garlic. | |
| 2 | Bring to a boil. | |
| 3 | Reduce heat, cover, and cook over low heat for 1 hour. | |
| 4 | Remove bone and bay leaves. Add ham and beans. | |
| 5 | Heat through. | Cook until internal temperature reaches 165°F for 15 seconds. |
