Ham Salad

Portion Size: 1/3 cup Ham Salad on lettuce leaf

Ingredients: Yields: 8 servings

Ingredients Notes: 
4 cups cooked ham, julienne strips or diced
1 cups celery, diced or julienne strips Wash, trim and diced or julienne strips 
4 Small sweet picklesChopped
4 Hard cooked eggsQuartered 
2 tablespoons prepared mustard 
2 teaspoons pickle juice 
2/3 cup light mayonnaise 
8 Lettuce Greens leaves (garnish-optional)Wash, trim and divide onto plates

1Combine the ham with celery, pickles, and eggs.
2Mix the mustard and pickle juice into the mayonnaise.
3Toss all together.
4Serve on a leaf of green. Serve chilled.
