Italian Chicken

Portion Size: 4 oz. chicken and cheese,  2 T.  sauce

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 (3oz.) boneless skinless chicken breasts
1/2 teaspoon oil
1 tablespoon Italian seasoning
1 large jar of thick spaghetti sauce
8 slices low fat mozzarella cheese

1Heat oil in a skillet and brown the chicken on both sides.
2Pour the spaghetti sauce over the chicken and add Italian seasoning.  Reduce the heat to low and simmer for one hour.Cook until internal temperature reaches 165°F. 
3Just before serving, put a slice of mozzarella cheese on each piece of chicken.  Allow it to melt.  Spoon sauce on top of cheese.
