Japanese Salad Dressing

Portion Size: 2 Tablespoons

Ingredients: Yields:  1 ¼ cups

Ingredients Notes: 
½ cup minced onion
½ cup peanut or olive oil 
1/3 cup rice wine vinegar 
½ teaspoon ground ginger 
2 tablespoons celery Washed, trimmed and minced
2 tablespoons Ketchup
1 clove garlic, mincedWashed, trimmed, peeled and minced
1 large carrotWashed, trimmed, peeled and chopped
2 tablespoons light soy sauce 
2 teaspoons sugar
2 teaspoons lemon juice 
1/4 teaspoon Black pepper
½ teaspoon salt 
For gluten free (GF): Use GF soy sauce. Always check each ingredient to be sure it is gluten free.

1In a food processor, add carrot and finely chopped.  Mix together all ingredients with carrots. Chill until ready to use.
2Serve immediately or refrigerate.
