Jicama, Carrot and Green Apple Slaw

2 cups shredded Napa cabbage or Green Cabbage | Washed, trimmed, core removed and shredded. |
1 (1 pound) jicama | Washed, peeled, and shredded |
2 cups shredded daikon radish or radish | Washed, trimmed and shredded |
2 granny Smith apples | Peeled, cored, and shredded |
3 large carrots | Washed, peeled and shredded |
1/4 cup finely chopped cilantro | Washed and finely chopped |
2 tablespoons olive oil | |
1/4 cup orange juice | |
1 tablespoon lime juice | |
1 teaspoon salt | |
¼ teaspoon pepper |

1 | Stir together cilantro, olive oil, orange juice, lime juice, salt, and pepper. | |
