Jicama, Carrot and Green Apple Slaw

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 cups shredded Napa cabbage or Green Cabbage Washed, trimmed, core removed and shredded.  
1 (1 pound) jicamaWashed, peeled, and shredded
2 cups shredded daikon radish or radishWashed, trimmed and shredded
2 granny Smith applesPeeled, cored, and shredded
3 large carrotsWashed, peeled and shredded
1/4 cup finely chopped cilantroWashed and finely chopped
2 tablespoons olive oil
1/4 cup orange juice
1 tablespoon lime juice
1 teaspoon salt
¼ teaspoon pepper

1Stir together cilantro, olive oil, orange juice, lime juice, salt, and pepper.
2Add cabbage, jicama, radish, apples, and carrots. Toss. Chill until ready to serve. Toss just before serving.
