Jicama Slaw

Portion Size: 1/2 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
1-2 large jicama (8 cups)Peeled, trimmed and julienne
1/4 cup fresh cilantro leavesWashed and minced
1 large limeJuiced (add zest of lime too for more flavor)
1 lemonJuiced (add zest of lemon too for more flavor)
1 (11 ounce) can mandarin orange segmentsDrained, liquid reserved
salt to taste

1Combine the jicama, cilantro, lime juice, lemon juice, and mandarin orange segments with a small amount of the syrup from the can in a bowl; mix to evenly coat.
2Allow mixture to sit 10 minutes.
3Season with salt and stir just before serving. Chill until ready to serve.
