Jicama Salad With Cumin

| 1-2 large jicama root (4 cups) | Washed, peeled, and sliced into thick matchsticks |
| 1 teaspoon salt | |
| 2 teaspoons sugar | |
| 2 limes | Washed and Juiced |
| 2 Tablespoons chopped cilantro leaves | Washed, trimmed and chopped |
| 1/2 teaspoon ground cumin | |
| 2 tablespoons olive oil | |
| ¼ teaspoon ground black pepper |

| 1 | Place jicama in a large bowl, sprinkle with salt, and add the juice of 1 lime. | |
