Kale with Parmesan Salad

Yields: 8 servings

Ingredients Notes: 
8 cups chopped fresh kaleWashed, tough stems removed and torn into bite size  pieces
3 tablespoons olive oil
¼ cup lemon juice
1tsp. dried thyme
¼ teaspoon salt
¼ teaspoon black pepper
½ cup grated Parmesan

1In a large bowl, whisk together olive oil, lemon juice, thyme, salt and pepper. *Optional to Add chopped fresh mango, peaches, plums or apples, toasted pecans, walnuts or almonds.
2Add kale and Parmesan and toss until the kale is evenly coated. Serve immediately.
