Mango, Pistachio and Avocado Salad with Tangy Lime Dressing

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 cups fresh lettuce,Washed, trimmed and torn into bite size pieces
1 large mango Washed, peeled, seed removed and diced
1 large AvocadoWashed, peeled, seed removed and diced
1/2 large red bell pepper Washed, trimmed and diced
1/2 cup pistachios, unsaltedShelled and finely chopped
1 small red onionWashed, peeled and sliced thin. 
Dressing:
Juice of 3 small fresh limes or 1/4 c. lime juice
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons rice vinegar
2 teaspoons Dijon mustard
2 gloves fresh garlic or 1/2 teaspoon garlic powderMince the fresh garlic
2 tablespoons cilantro or 1 teaspoon dried cilantroWash, trim and chop the fresh cilantro
Salt and pepper to taste

1Place lettuce in a large salad bowl. Season with salt and pepper. 
2Add mango, avocado, red bell pepper, red onion and pistachios.
3In a small food processor combine, lime juice, olive oil, rice vinegar, honey, Dijon mustard, garlic and cilantro.
4Just before serving toss salad with dressing.  Serve immediately.
