Lemon Bars
Portion Size: 2” x 2” square
Ingredients: Yields: 8 servings

| ⅓ cup margarine, softened | |
| 1 cup granulated sugar | |
| 1 cup plus 2 tablespoons all-purpose flour | Divided |
| 2 eggs | |
| 2 teaspoons zest lemon peel | Wash, and zest |
| 3 tablespoons lemon juice | |
| ¼ teaspoon baking powder | |
| Powdered sugar for dusting |

| 1 | Beat margarine with an electric mixer on medium to high speed for 30 seconds. | |
| 2 | Add ¼ cup of the sugar and beat till combined. Beat in the 1 cup flour till crumbly. | |
| 3 | Press into bottom of an ungreased 8X8X2 inch baking pan. | |
| 4 | Bake in a 350°F oven for 15 to 18 minutes or just till golden. | |
| 5 | Meanwhile, combine eggs, the remaining sugar, the 2 tablespoons flour, lemon peel, juice, and baking powder. | |
| 6 | Beat for 2 minutes or till thoroughly combine. Pour over hot baked layer. | |
| 7 | Bake in a 350°F oven about 20 minutes more or till lightly browned, around the edges and center is set. | Cook until internal temperature reaches 165°F for 15 seconds. |
| 8 | Let cool. Dust with small amount of powdered sugar. |
