Mango, Pistachio and Avocado Salad with Tangy Lime Dressing

8 cups fresh lettuce, | Washed, trimmed and torn into bite size pieces |
1 large mango | Washed, peeled, seed removed and diced |
1 large Avocado | Washed, peeled, seed removed and diced |
1/2 large red bell pepper | Washed, trimmed and diced |
1/2 cup pistachios, unsalted | Shelled and finely chopped |
1 small red onion | Washed, peeled and sliced thin. |
Dressing: | |
Juice of 3 small fresh limes or 1/4 c. lime juice | |
2 tablespoons olive oil | |
2 tablespoons honey | |
2 tablespoons rice vinegar | |
2 teaspoons Dijon mustard | |
2 gloves fresh garlic or 1/2 teaspoon garlic powder | Mince the fresh garlic |
2 tablespoons cilantro or 1 teaspoon dried cilantro | Wash, trim and chop the fresh cilantro |
Salt and pepper to taste |

1 | Place lettuce in a large salad bowl. Season with salt and pepper. | |
2 | Add mango, avocado, red bell pepper, red onion and pistachios. | |
3 | In a small food processor combine, lime juice, olive oil, rice vinegar, honey, Dijon mustard, garlic and cilantro. | |
4 | Just before serving toss salad with dressing. Serve immediately. |
