Meat and Pasta Bake

Portion Size: 1 cup

Ingredients: Yields: 8 servings

Ingredients Notes: 
2 cups, uncooked pasta May use whole grain pasta
2 1/2 Pounds lean ground beef 
1 cup chopped onionWash, peel and chop
1 ( 8oz.) fresh mushrooms Wash, trim and slice
1 can fat free evaporated milk 
1 cup low salt beef broth 
2 cups shredded low fat Swiss cheese
1 (8 ounce) carton light sour cream
2 Teaspoons Worcestershire sauce 
2 Teaspoon thyme
2 (10 ounce) packages frozen mixed vegetables 
1/2 cup bread crumbs 
For gluten free (GF): Use GF beef broth, GF bread crumbs and GF pasta. Always check each ingredient to be sure it is gluten free.

1Preheat oven to 350 degree oven.
2Cook pasta according to the directions on the package
3Drain; set aside.
4In a large skillet cook meat and onion till meat is brown.
5Drain fat.
6Stir in broth, cheese, sour cream, milk, Worcestershire sauce and thyme.
7Stir in vegetables and pasta.
8Transfer to a baking dish.
9Bake covered, in a 375 degree for 30 minutes.
10Stir.
11Sprinkle with bread crumbs. 
12Bake, uncovered, for 5 to 10 minutes more or till heated through. Cook until internal temperature reaches 165 F degrees for 15 seconds
