Pepper Lime Chicken

Portion Size: 5 oz. chicken with bone, 3 oz. chicken boneless

Ingredients Notes: 
2 ½ lbs. boneless skinless chicken pieces
1 teaspoon lime zestFinely shredded.
1/2 cup lime juice
1 tablespoon oil
1 teaspoon garlic powder
2 teaspoons ground black pepper
2 teaspoons dried thyme or basil
1/2 teaspoon salt

1Place chicken pieces, skin side down, on the unheated rack of a broiler pan.  Broil 4 to 5 inches from the heat about 20 minutes or till lightly browned.
2Meanwhile, for lime glaze, in a bowl stir together lime peel, lime juice, oil, garlic, black pepper, thyme or basil, and salt.  Brush chicken with lime glaze.
3Turn chicken; brush often with glaze during the last 5 minutes of cooking.Cook until internal temperature reaches 165 degrees F.
