Pork Chop with Apple Mustard Glaze
Portion Size: 3 oz. boneless, 5 oz. with bone

| 8 boneless pork chops, ½ inch thick (3 oz. each) | Trim all visible fat. |
| ½ teaspoon black pepper | |
| ¼ cup oil | |
| 1 teaspoon salt | |
| ½ cup apple juice | |
| ¼ cup apple jelly | |
| ¼ cup Dijon mustard |

| 1 | Season pork chops with salt and pepper. | |
| 2 | In a large nonstick skillet, heat oil over medium high heat. | |
| 3 | Brown chops 2 minutes on one side | |
| 4 | In a small bowl combine apple juice, jelly and mustard | |
| 5 | Turn chops and add apple juice, jelly and mustard to skillet | |
| 6 | Reduce heat to low, cover and cook 5-6 minutes. To ensure doneness check with meat thermometer. | Cook to 145°F for 15 seconds |
| 7 | Serve hot. |
