Pork Chop with Cranberry Apple Sauce

Portion Size: 3 oz. boneless, 5 oz. with bone

8 boneless pork chops, ½ inch thickTrim all visible fat
1 teaspoon salt 
½ teaspoon black pepper 
¼ cup oil 
1 cup apple cider or juice 
1 cup cranberry sauceMay use canned.
¼ cup honey 
½ cup orange juice concentrate, thawed 
1 teaspoon ground ginger 
For gluten free (GF): Use GF cranberry sauce.  Always check each ingredient to be sure it is gluten free.

1In a large nonstick skillet, heat oil over medium high heat. 
2Brown chops and season with salt and pepper. 
3Add apple cider. Cover and simmer for 8 minutes.Cook to 145° F for 15 seconds for Pork
4In a small bowl combine cranberry sauce, honey, orange juice concentrate and ginger. 
5Pour sauce over chops. 
6Cook for 1-2 minutes until heated through.
