Pork Chop with Cranberry Apple Sauce
Portion Size: 3 oz. boneless, 5 oz. with bone

| 8 boneless pork chops, ½ inch thick | Trim all visible fat |
| 1 teaspoon salt | |
| ½ teaspoon black pepper | |
| ¼ cup oil | |
| 1 cup apple cider or juice | |
| 1 cup cranberry sauce | May use canned. |
| ¼ cup honey | |
| ½ cup orange juice concentrate, thawed | |
| 1 teaspoon ground ginger |

| 1 | In a large nonstick skillet, heat oil over medium high heat. | |
| 2 | Brown chops and season with salt and pepper. | |
| 3 | Add apple cider. Cover and simmer for 8 minutes. | Cook to 145° F for 15 seconds for Pork |
| 4 | In a small bowl combine cranberry sauce, honey, orange juice concentrate and ginger. | |
| 5 | Pour sauce over chops. | |
| 6 | Cook for 1-2 minutes until heated through. |
