Pork Roast with Sauerkraut

Portion Size: 3 oz. boneless, ½ c. sauerkraut

IngredientsNotes:
3 ½-4 lbs. boneless pork roastTrim all visible fat. Cut across the grain into thin bite size pieces
½ teaspoon garlic powder 
½ teaspoon black pepper 
4 cups sauerkraut 
½ teaspoon caraway seeds 
½ cup peeled and diced apple 
1 small onion, diced

1Heat oven to 350 degrees 
2Place roast in a roasting pan and season with garlic powder and pepper. 
3Add sauerkraut, caraway seeds, apple and onion. Cover. Bake for 2 ½ hours to 3 hoursCook until internal temperature reaches 145 ° F with a 3-minute rest. Or longer.
