Pork Stir Fry with Vegetables

Portion Size: 1 cup

2 pounds lean boneless pork loinTrim all visible fat.
2 Tablespoons lite soy sauce 
1 Tablespoon rice vinegar 
1 Tablespoon oil 
1 teaspoon garlic powderOr 2 cloves minced
1 teaspoon ground ginger 
20 oz. package stir fry vegetables 
1 Tablespoon low salt chicken broth or water 
1 Tablespoon sesame seeds 
For gluten free (GF): Use GF soy sauce and GF chicken broth or water.  Always check each ingredient to be sure it is gluten free.

1Slice pork across grain into 1/8 inch strips. 
2Marinate in soy sauce, vinegar, oil, garlic and ginger for 10 minutes. 
3Heat oil in nonstick pan until hot 
4Add pork and stir fry for 3-5 minutes until pork is no longer pinkCook to 145°F for 15 seconds
5Add frozen vegetables and chicken broth or water. Stir Mixture. Cover. Cook until vegetables are tender crisp. 
6Sprinkle with sesame seeds.
