Pork Roast with Sauerkraut
Portion Size: 3 oz. boneless, ½ c. sauerkraut

| 3 ½-4 lbs. boneless pork roast | Trim all visible fat. Cut across the grain into thin bite size pieces |
| ½ teaspoon garlic powder | |
| ½ teaspoon black pepper | |
| 4 cups sauerkraut | |
| ½ teaspoon caraway seeds | |
| ½ cup peeled and diced apple | |
| 1 small onion, diced |

| 1 | Heat oven to 350 degrees | |
| 2 | Place roast in a roasting pan and season with garlic powder and pepper. | |
