Pumpkin Gelatin

2 cups boiling water
2 (3 ounce) packages orange-flavored gelatin
½ cup brown sugar
2 teaspoons ground cinnamon
4 cups pumpkin puree
1⅓ cups cold water

1Stir together 1 cup boiling water and gelatin in a bowl.
2Whisk in the brown sugar and cinnamon until the brown sugar is dissolved.
3Add the pumpkin puree and cold water; stir until mixture is smooth.
4Cover and chill in refrigerator until set, about 2 hours.Chilled internal temperature maintained at 41°F.
