Popcorn Balls

Portion Size: ⅛ batch

Ingredients: Yields: 8 servings

2 quarts popped popcorn
1 cup packed brown sugar
⅓ cup water
⅓ cup dark corn syrup
¼ cup margarine
½ teaspoon salt
1 teaspoon vanilla extract

1Place popcorn in a large bowl; Set aside. 
2In a heavy saucepan, combine brown sugar, water, corn syrup, margarine and salt.
3Bring to boil over medium heat, stirring constantly.
4Continue cooking without stirring until a candy thermometer reads 270°F. (Soft crack stage)Cook until thermometer reads 270°F.
5Remove from heat and stir in vanilla.
6Pour evenly over popcorn.
7When cool enough to handle, quickly shape into balls.
