Roast Beef Sandwich

Portion Size: 1 Sandwich

Ingredients: Yields: 8 servings

Ingredients Notes: 
16 slices breadMay use whole grain
1 pound cooked and sliced lean deli roast beef
½ cup mayonnaise
¼ cup mustard 
16  slices tomatoesWash, trim and sliced (optional)
1 Small red onionWash, peel and slice thin (optional)
2 cups fresh spinach leaves  or lettuceWashed, trimmed and chopped (optional 
For gluten free (GF): Use GF bread. Check all ingredients to be sure they are gluten free.

1Spread each slice bread  with mayonnaise and mustard
2Top each sandwich with 2 oz. roast beef
3Arrange tomato, lettuce or spinach and onion on each sandwich. Cut in half diagonally. Chill  in an airtight container  until ready to serve.
