Roast Beef Tortilla Wraps

Portion Size: 1 whole wrap (Approx. 2 oz. roast beef, 2 T. cream cheese/sour cream mixture, 1 T. tomatoes, 1 T. red onion and  2 T. spinach leaves)

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 burrito sized flour tortillas May use whole grain
1 pound cooked and sliced lean deli roast beef
8 oz. light cream cheese, soften
1/2 cup light sour cream 
1/2 cup chopped tomatoesWash, trim and chop
Small red onionWash, peel and slice thin
2 cups fresh spinach leaves Washed, trimmed and chopped
For gluten free (GF): Use GF tortilla wraps. Check all ingredients to be sure they are gluten free.

1Heat each tortilla in a large skillet.
2Combine cream cheese and sour cream in a small bowl.
3Spread each tortilla with cream cheese mixture
4Arrange tomato, roast beef and onion on each tortilla
5Top with spinach leaves
6Roll up tight and cover each with plastic wrap.  Refrigerate for 1 hour before serving
