Spanish Style Lima Beans

Portion Size: ½ cup

Ingredients:     Yields: 8 servings

4 cups of  frozen lima beans 
½ cup of water 
¼ teaspoon of salt 
2 tablespoons of vegetable oil 
1 medium onionWashed and chopped
1 cup of stewed tomatoesWashed and chopped
1 teaspoon chili powder 
1 small bay leaf 
¼ teaspoon pepper

1Heat oil in skillet, sauté onion in it. 
2Add beans, salt, tomato, chili powder, and bay leaf.Cook until internal temperature reaches 135°F.
3Bring to boil. 
4Simmer with other ingredients, approximately 20 minutes.
