Spicy Turkey Tortilla Wraps

Portion Size: 1 whole wrap (Approx. 2 oz. turkey, 2 T. cream cheese/sour cream mixture, 1 T. tomatoes, 1 T. red onion and  2 T. spinach leaves)

Ingredients: Yields: 8 servings

Ingredients Notes: 
8 burrito sized flour tortillas May use whole grain
1 pound cooked and diced lean turkey 
2/3 light mayonnaise
1 (10 oz.) can diced tomato with green chili peppers 
¼ cup onionWash, peel and finely chopped
½ teaspoon chili powder
Dash cayenne pepper
1 cup low fat shredded Mexican cheese blend
2 cups fresh spinach leaves Washed, trimmed and chopped

1Heat each tortilla in a large skillet.
2Combine mayonnaise, tomatoes, onions, chili powder and onion in a small bowl.
3Spread each tortilla with mixture
4Arrange turkey and cheese on each tortilla
5Top with spinach leaves
6Roll up tight and cover each with plastic wrap.  Refrigerate for 1 hour before serving. Slice at diagonal angle and serve
