Southwestern Grilled Turkey and Cheese Sandwich With Chipotle Sauce

Ingredients Notes: 
1/4 Cup margarineSoftened
8 Slices American cheese (1 oz.) May use other low-fat sliced cheese
1 lb. sliced lean turkey 
1 yellow bell pepperWashed, trimmed and sliced
1 red bell pepperWashed, trimmed and sliced
1 teaspoon olive oil
Chipotle Sauce: 
½ cup light mayonnaise or nonfat plain Greek yogurt
1 tablespoon adobo sauce 
¼ teaspoon garlic powder
¼ teaspoon paprika
1 teaspoon lemon or lime juice
16 Slices breadWheat or white

1Pre-heat oven to 400-degree F.  On a baking sheet, drizzle peppers with olive oil. Toss to coat.  Roast for 15-20 minutes until tender.
2Combine mayonnaise or yogurt, adobo sauce, garlic powder, paprika, lemon or lime juice in a food processor. Blend until smooth. 
3Put 1 slice of cheese and 2 oz. turkey between 2 slices of bread. Spread Chipotle sauce on inner slice of bread. Add some roasted peppers. Spread margarine on the outside of each slice of bread. Heat a large skillet, and place sandwich in skillet.  
4Cook until golden brown and then turn until both sides are golden brown.  Repeat until 8 sandwiches are made.
